Whole Pantry~Watermelon & Avocado Salad
I love this recipe in the summer months when I do everything I can to stay hydrated.
Watermelon is high in vitamin C and potassium which makes this combination great at easing inflammation.
We often have dinner at the beach in the summer and this is one of our go-to recipes. I love the pairing of avocado and Haloumi (goat’s cheese) with the watermelon. There is a touch of salt to the cheese which adds a wonderful depth of flavor. The avocado’s texture melts in your mouth and gives the salad a rich, luscious fullness.

Ingredients:
1-3/4 pound (approx 1/8 of a whole watermelon
1/2 large avocado, thinly sliced
2 teaspoons sunflowers seed
1 lime, juiced
1/3 cup basil leaves
1/2 tablespoon olive or macadamia oil
sea salt and cracked pepper to taste
2 ounces of Haloumi cheese, thinly sliced
Assembling the Salad:
- Slice watermelon in thin slices.
- Layer watermelon and avocado on plates sprinkle sunflower seeds and torn basil leaves.
- Season with salt and pepper. Squeeze fresh lime juice and drizzle with olive oil.
- In a hot pan, cook Haloumi cheese for 1-2 minutes on each side until lightly brown.
